Resistance is futile at Posh Pastries

Reading the menu alone will make your mouth water—hopefully offsetting a few of the oh-so-worth-it calories you’re about to ingest. Want something sweet for breakfast? Try a yeasty cinnamon roll, caramel nut roll, scone, or slice of pumpkin cream cheese bread. Balance the sweetness with a savory lunch; perhaps a chorizo and sweet pepper quiche, or a chicken, asparagus, and portabella mushroom potpie. And then top it off with dessert, chosen with much difficulty from the numerous menu offerings. Iced sugar cookies in whimsically decorated shapes. Flaky peach-blackberry pies. Strawberry champagne cupcakes. And specialty cakes, ranging from a raspberry truffle to a peanut butter chocolate torte.

They do taste as good as they sound, according to the steady stream of patrons, as well as the awards. Posh Pastries has won the Parker Chronicle’s designation of Best Bakery in Parker for 2008, 2009, and 2011. It earned a “Top Five” pie bakery listing from the Gabby Gourmet in 2010. And a “Top Five” spot on Channel 7’s A-List.

One reason for the continued success lies in the impressive background of the owner and pastry chef, Hilary Casselberry. After training at Le Courdon Bleu Culinary Institute in Portland, Oregon, she furthered her education making pastry in Paris and as a pastry chef for top hotels and catering companies.

Posh Pastries can accommodate needs for social and business events, providing everything from sandwiches, meat pies, and salads to multi-tier wedding cakes. Gluten-free options are also available. And you can find their goods at the Parker farmers market on Sundays.
